Salmon Croissant Brunch Board
Ingredients
Honey Pickled Red Onion:
- 1 red onion
- 1/2 cup white vinegar
- 1/2 cup water, warm
- 1 1/2 Tbsp honey
- 1 tsp salt
Lemon and Herb Cream Cheese:
- 125g cream cheese, spreadable
- 2 Tbsp fresh herbs, basil, chives, to your tastes
- 1 lemon, zest, 1 Tbsp juice
- pinch salt
To Serve:
- 6 petite croissant
- 100g Regal Cold Smoked Salmon
- 100g Regal Hot Smoked Salmon - Classic
- 1/2 cup radish micro greens
- 2 Tbsp capers
- lemon wedges
Method
Honey Pickled Red Onion:
Finely slice the red onion. In a jar, combine warm water, vinegar, honey, and salt. Secure the lid and shake well until the honey dissolves. Add the red onion and submerge it under the brining mixture. Pickle for 30 minutes.
Lemon and Herb Cream Cheese:
Use a hand mixer to blend together the ingredients for the lemon and herb cream cheese until thick and creamy.
To Serve
Place croissants on a serving board. Arrange cream cheese, pickled red onions, and capers in their own serving bowls, and place on the board. Add smoked salmon and lemon wedges.
