Creamy Spinach Salmon Pasta
Ingredients
- 200g Regal Cold Smoked Salmon
- 200g-300g fettuccine pasta
- 2 Tbsp butter
- 2 cloves garlic, or 2 tsp crushed garlic
- 1 cup full cream
- 1/2 cup dry white wine
- 1/2 cup parmesan cheese, grated
- 1 cup baby spinach leaves
- 1 bunch broccolini
- 2 tsp capers
- 1 whole lemon, slices
- chilli flakes, to taste
- salt and pepper, to taste
Method
Bring a large pot of water to boil on the stove, cook fettuccine according to packet instructions, add broccolini to the final 1 minute of cooking.
Heat a large, deep pan on medium. Add butter, crushed garlic, chilli flakes and chopped herbs. Fry for 2-3 minutes until fragrant. Add in stock, cream and white wine. Add in pasta, ensure it is fully submerged into the water.
Cook for 10-12 minutes (or to packet instructions), stirring often to make sure the pasta doesn’t stick together. The liquid should thicken as the pasta cooks. Add in spinach and capers and mix together. Stir in the cheese and season with salt and pepper (to taste).
Serve right away, top with Regal Cold Smoked Salmon and garnish with lemon slices. Enjoy
