Simplicity is bliss, and nothing more simple or satisfying than a toasted bagel, spread with cream cheese and toped with layers of Regal Cold Smoked Salmon.
Choose good quality bagels that are tender to touch, not too dense. Whole-wheat varieties will give valuable fibre, but other flavours and toppings like sesame seeds, poppy seeds or onion bagels give some great crunch and flavour. Avoid bagels that have too much sugar added. Sugar is unnecessary in bagel production and only sweetens something that doesn’t need to be sweet.
A good quality cream cheese will make a huge difference. Spreadable cream cheese varieties just have water whipped in to make them easier to handle, but normal cream cheese left at room temperature for a few minutes will allow the cheese to spread just as well. The trick is to mix it a little with a wooden spoon before slathering on. Chives, capers, lemon juice, sweet chilli sauce or even roasted garlic can be added to the cream cheese to give extra flavouring.
2 x 3.5 oz Regal Marlborough King Salmon Cold Smoked Slices
4 fresh bagels
8.8 oz cream cheese or goats’ cheese
To serve, capers, lemon or lime wedges, sprouts,
watercress, microgreens, black pepper, red onion,
pickles or shredded lettuce
Slice the bagel through the middle horizontally. Toast under a hot grill or in a toaster for two minutes, until just browned.
Spread the bottom half with plenty of prepared cream cheese or goats’ cheese. Fold the Regal Salmon slices on top of the cheese and season with black pepper.
Serve with other toppings such as red onions, extra capers, pickles or fresh herbs for extra flavouring. Squeeze over a little lemon or lime juice and serve immediately.
